Banana pancakes with greek yoghurt and blueberries

Another fantastic breakfast are these banana pancakes. They are very fulfilling and have a unique taste! Let's see how you can make them!





The ingredients for 4 banana pancakes:


- 2 bananas

- 3-4 eggs (depends on how large the eggs are)

- 75 grams of oats

- cinnamon

- pinch of salt

- a dash of milk (optional)


For the topping:

- Greek yoghurt

- Blueberries

- Nuts, seeds, shredded coconut






Let's start!

I always start by mashing the banana in a bowl. The ratio is always 1 banana and 2 eggs or 2 bananas and 3-4 eggs if you want to make several banana pancakes. Add the eggs to the bowl and mix everything.

I always grind the oatmeal in a food processor, but this is not necessarily necessary. Choose what you like!

After grinding the oatmeal I add it to the mashed banana and eggs and sprinkle lots of cinnamon and a pinch of salt on top. Stir well and add a splash of milk. However, this is optional. If the mixture is a bit dry, adding a splash of milk is a good option.




Bake baby, bake!

Once everything is well stirred together add some coconut oil to the pan. I personally like this better than olive oil. Brown the pancakes on medium heat. If you leave the pancakes in the pan a little longer on lower heat they will get a little crispy. These crispy pancakes are my absolute favourite!



The topping

Of course, you can eat banana pancakes without any topping, but I love to put some Greek yoghurt on top to balance the texture. But again, choose whatever you like! Add some blueberries, seeds and nuts on top and you have a delicious light meal.
